1-2 fennel bulbs
1-2 sweet peppers
1 sweet onion
balsamic, salt & pepper to taste
Fry bacon & remove from pan
Chop veggies roughly & armelize by cooking over med (or med-low) heat in bacon grease with some salt - add some butter for good measure if you want! A cast iron skillet works best.
When very soft and sweet, add bacon pieces back to pan to re-warm.
Toss together with balsamic & more salt & pepper to taste.
Serve as warm side dish - nice on top of arugula or spinach....topped with poached eggs... mmmm
