Leek Frittata

Season: 

  • Fall

Ingredients: 

  • 3-4 leeks
  • 3-6 eggs
  • Splash of milk or water
  • fresh basil or other herbs you like
  • parmesan & other tasty cheese (swiss works well)
  • salt to taste
  • 2-3 T butter

Directions: 

Preheat oven to 350.

Melt butter on stovetop in cast iron (or other oven-safe) pan.

Chop leeks and sautee in butter on low/med heat until carmelized.

Toss in basil, thyme, sage or other herbs & cook in lightly.

Whisk eggs with milk or water then pour over leeks & cook until bottom is set.

Sprinkle parmesan & other cheese over top to cover. Place pan in 350F oven until eggs are set & cheese is bubbly (10 mins or so).
