Garlic Scape Pesto


  • Spring


  • pile of chopped scapes, flower buds removed
  • olive oil
  • good handful of fresh herbs (oregano, basil, thyme, chives...whatever you like
  • pinch of salt


Puree in food processor - just enough oil to blend well.
Toss into pasta sauces, spread on sandwiches, add to salad dressings.... use anywhere you'd use garlic. It also freezes great so save some up for winter!
