Celeriac & Apple Slaw

4 c water

3T lemon juice

1 med celeriac, peeled & cut into TINY matchsticks or grated

2 med-large tart apples, cored, peeled & cut into 1/4" strips (or grated)

1/2 c chopped walnuts

3T white wine vinegar

3-4T mayo

1 T heavy cream

2 t dijon mustard

1 1/2 t dried tarragon, basil or thyme (pick 1)

1/2t freshly ground black pepper

salt to taste


Combine water & lemon juice in large bowl. Add apple & celeriac & let stand for 15 mins (to prevent browning)

Toast the walnuts in a dry skillet & let cool

Drain the celeriac & apples, return to bowl, add vinegar & toss

Combine mayo, cream, mustard, herbs, salt & pepper. Pour over cleriac & apples & toss to coat. Add the walnuts & toss again. Best chilled a few hours before serving.
