Beets - Middle Eastern Shredded Beet Salad


  • Fall


  • 2c beets, cooked & peeled, then shredded or sliced
  • 1/2c fresh parsley
  • 3T olive oil
  • 2T lemon juice
  • 2T onion, chopped
  • 1T sugar
  • 1/2t salt
  • 1-2 cloves garlic, pressed
  • pepper to taste


To arrange around the salad:

  • 1c carrots, shredded
  • 2 hard-cooked eggs, sliced
  • 1/2c fresh parsley, chopped
  • green olives


Mix ingredients in 1st block (beets to pepper) together & chill.
Place beet mixture in the centre of a bowl or platter. Arrange carrots, eggs, parsley & olives around the beet mixture.
Olives may also be sliced on top of the beets.
