Asian Lettuce Wraps

Season: 

  • Spring

Ingredients: 

1 head butterhead (or other) lettuce

sweet spring turnips, julienned

green onions, chopped

carrots or kohlrabi, grated

cilantro & mint, (or thai basil) chopped

1lb ground pork or beef

garlic scapes

Opt: onions, ginger root

Sauce:

~1/4-1/3c soy sauce

1-2 T brown sugar

1 T rice vinegar

1 T lime juice

sriracha (or other hot sauce) to taste

finely grated ginger

Directions: 

Fry ground meat (with onions & thinly sliced ginger if you like).

Mix sauce ingredients.

When meat is almost cooked, toss in chopped garlic scapes and pour sauce over. Cook until thick.

Meanwhile, chop other ingredients, wash lettuce and rip off individual leaves.

Wrap everything up in lettuce leaves.

Great side or main dish!
